Every once in a while we find a coffee that strays from our standard, beloved Washed Processes. Herminio Perdomo Romero's coffee displays all the best qualities of a honey processed lot. Upon grinding a brewing, you'll discover a deeply sweet aroma. A small pop of dried cranberry brightness meets cacoa nib and a slightly grippy body.

Notes from our partners at The Coffee Quest:

Finca Alto de Los Santos is a family-run farm located in Corquín, Copan. This particular lot is managed by Herminio Perdomo. The farm sits at an elevation of approximately 1,350 m.a.s.l and consists of a total of 45 Ha, of which 18 Ha are planted in coffee, including: 5 in Catuaí, 5 in Caturra and 8 in IHCAFE90.

This honey processed lot is made up of the Caturra and Catuai varieties. In addition to
coffee, Finca Alto de Los Santos has many shade, citrus and fruit trees, including: guama, cedar, mahogany, evergreens, peaches and oranges. Not only does the variety of trees offer shade, but they help attract lots of various fauna. Herminio produced his first coffee many years ago with his parents, Don Herminio and Doña Maria and his grandfather, Don Froilán, who transmitted the spirit of coffee growing to their children. Since then, he has been part of a dedicated, passionate, coffee growing family. This is our forth year working Finca Alto de Los Santos and the various lots produced by different family members.

In addition to growing coffee, Herminio is also one of the General Managers at the CAFESCOR Cooperative and has been instrumental in pushing forward the production of their specialty lots over the years.
