This decaf blend was constructed from many day lot from producers that we have relationships with, but also new farmers. We pick coffees that have expressive acidity and high sweetness. We’ve found that these types of coffees hold up great to the decaffeination processing. The varieties that contributed are Caturra, Tabi, Colombia, and Castillo. The processing is washed, then dried in raised and covered parabolic beds (marquees).After drying it is sent to the decaffeination plant. It is processed with Ethyl Acetate.
